chili sauce in greece / Athens

Athens is wonderful, no high rises, everything to scale, African or eastern light or something, and the madding crowd of tourist worship self at the acropolis, which is right. But why oh why do they not serve chilli sauce with their souvlakia and gyros? It's the missing piece of their civilisation.
